Tori's Tasty Tuesdays - Marshmellow Fudge Bars

I had a comment a while back about these bars that we made for my dad's birthday, so I thought I would post the recipe - since an new installment of Tori's Tasty Tuesdays is long overdue! =) These bars are postively DELICIOUS and have been a favorite of my dad's for years! His mom used to make them for him, but the recipe has now been passed on to us. =)

Marshmellow Fudge Bars

Ingredients:

  • 1 cup margarine
  • 2 cups sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 1 1/2 cups flour
  • 1/2 tsp. baking powder
  • 4 tbsp. cocoa
  • 1 cup nuts (optional - we don't use them)
  • 1 pkg. miniature marshmellows

Cream margarine and sugar, then add eggs, salt and vanilla. Sift dry ingredients and stir into creamed mixture. Add nuts. Spread in greased 10x15 cookie sheet. Bake 15 minutes at 350 degrees. Remove from oven and cover with package of marshmellows. Bake 3 more minutes. Cool and frost.

Ingredients for frosting:

  • 1/2 cup brown sugar
  • 2 squares chocolate (or use 2-4 tbsp. cocoa and a tbsp. of syrup)
  • 1/4 cup water

Boil for 3 minutes, then add 3 tbsp. of margarine and 1 tsp. of vanilla. When cool, add 1 1/2 cups of powdered sugar.

Yay! Tasty Tuesdays are back. In a few years you can compile all these in a book. You'll be famous. Not that you're not famous already......TTYL.

Yum...those look delicious! If only I could buy marshmallows where I live. LOL.

I have 2 bags of marshmallows because I got them free with something else I bought. I've been wanting to make something with them and I'm so happy that I found this recipe! Thanks! :)
